NOTE: I just steamed the spinach plain, with a bit of salt. If you want more flavour, you can cook it using spices of your choice.
Take the MTR Dosa mix in a bowl, add to it the rava, turmeric, chilli powder and curds and mix well. Add salt if desired. Add sufficient water to make a batter of dosa like consistency. (You can follow the instructions on the pack, but use your judgement if and as required OR check the video below)
NOTE: It is important to get the batter right if you want thin, crisp dosas. This is a great video tutorial for preparing Dosas.
Brush oil onto a tava. Take a big spoonful of the batter and pour onto the tava. Spread out the batter in a circular manner to get a thin round dosa. Then turn on the heat and pour some oil in the center and around edges.
NOTE: I find it simpler to spread the batter on a cool tava and then turn on the heat, because the other way round always ends up a mess! I've had 100% success at thinner, crispier dosas this way!
Cook on medium/high heat till the dosa just starts to brown, then flip and cook for a minute on the other side.
Then flip it over again and spread some of the cooked spinach on the dosa. Next, crack an egg onto the center of the dosa and sprinkle generously with grated cheese.
Cover and cook till the egg has set and cheese has melted. Sprinkle some salt and freshly ground pepper if desired.
NOTE: I like my to have eggs with a runny yolk, hence I have done it this way. (And it looks good too!) You can even beat the egg and spinach together and then add, if you aren't fond of runny yolks.
Serve immediately with buttered and toasted bread and a nice hot cup of coffee/tea!
HEALTHY TIP: You can use less oil by using a non-stick tava. *NOTE: As an alternative to the Dosa mix, you can also prepare the Dosa batter as per this recipe by Tarla Dalal.
